OLIVE OIL
Brač’s olive groves you may notice the trees have broad, low crowns as they are often pruned to avoid them getting too tall, to make picking easier. You can see that if you take a hike through the olive groves around Ložišće. For oil production olives are picked when they are partly green and partly brown. The olive oil production process includes collecting, washing, and pressing of olives, malaxation of olive paste, centrifugation, decantation, storage, filtration and packaging (bottling). This looks quite simple but we are all aware of those subtle differences between different olive oils, so what is the source of the differences? POGRABLJE Robust Intensity Extra Virgin Olive Oil Our olive trees are located in Pograblje valley which is located in deep canyon hidden from harsh summer sun. This special location and uniquely rich soil for Dalmatian islands produces excellent but limited amount of special olives with extra high content of oil (23% in the record year). Also, our oil is not filtrated. |
The major component of olive oils are triacylglycerols, representing more than 98% of total oil weight. Minor components, which are present in very low amounts (about 2% of oil weight), include more than 300 different chemical compounds. These minor compounds are responsible for the specific taste of some unique olive oils. Unfortunately some of these components are removed during final filtration process which is used to change cloudy virgin olive oil into the crystal clear oil we can see in stores. This process is significantly decreasing fruitiness, pungency and bitterness attributes of olive oil.
The Pograblje Extra Virgin oil is a beautifully robust, early harvest Brač olive oil from Pograblje valley! This limited harvest has strong peppery finish and very intense flavors on the front end. Pograblje oil has classic notes of green fruits, has a heavier mouth feel, and a jolt of pungency on the back end. An excellent choice for those who don't mind bitterness or pungency. Big aroma, & spicy finish! Bold but balanced. Serving Suggestions: Robust olive oils are often better suited to full-flavored dishes that are well seasoned so that they can hold up to the complexity of the olive oil. |
